So I have two iPhone 6s’, the newer iPhone 6s’ screen just cracked and stopped working, could I take the screen from the second iPhone 6s and put it on the first one without having to replace the home button and have Touch ID still work?

No, you will need to transfer the home button as well to retain the touch ID as the home button is married to the logic board.
