I’d like to replace my 1TB HD with an 1TB SSD Samsung 850 EVO. I wonder if this drive is compatible, temperature-sensor-wise (can I just switch it and not get SMC-fan trouble) and if and what kind of bracket I need to get the EVO in.

Sadly, No You’ll need a means to offset the missing sensor Apple uses within SMC services to control the systems internal temp. Luckily OWC makes the needed sensor unit and bracket frame as your current drive is 3.5" and the SSD is 2.5" in size: OWC In-line Digital Thermal Sensor for iMac 2009-2010 Hard Drive UpgradeOWC 2.5" to 3.5" Drive Adapter Bracket You’ll want to follow this IFIXIT guide: iMac Intel 27" EMC 2390 Hard Drive Replacement. But before you do anything please make sure your systems firmware is up to date. Follow this Apple T/N: About EFI and SMC firmware updates for Intel-based Mac computers. Make sure yours is at the level listed or newer.
