I was given an early 2015 MacBook with Retina display, dead motherboard. I found a cheap second hand MacBook with a broken Retina display, but it’s a mid-2015. Can I transfer the working display on the later MacBook? If not, can I swap the motherboard?

You should be good to go! These displays are almost identical to each other. You should not have any problems.
